Instant Pot Brownie Bites
This is a bite-sized version of my Classic Foolproof Brownies recipe made in the Instant Pot. Perfectly portioned for parties or snacking, these brownie bites are soft and slightly gooey in the center, just how brownies ought to be.   1. In a medium bowl, mix the sugar, flour, cocoa powder, and baking powder together.
  2. In a large bowl mix the butter, eggs, and vanilla extract together.
  3. Add the dry ingredients to the bowl with the wet ingredients, mixing with a spoon until the dry ingredients are completely mixed into the wet ingredients. Optional: Fold in the chopped walnuts, reserving some to sprinkle on top of the batter once it is in the cups.
  4. Spray the inside of the cups of 2 silicone egg bite molds with nonstick cooking spray. Spoon the batter evenly into the cups of the molds (the cups will be about half full) and shake the molds and bang them against the counter a bit so the batter sinks down inside the cups evenly. If using walnuts, sprinkle the additional reserved chopped walnuts on the tops of the brownies. Lay a piece of paper towel over the top of each mold (this will help catch excess moisture from the steam inside the pot), then cover the paper towel and top of the molds lightly with foil.
  5. Pour the water into the pressure cooker pot and place a steamer rack trivet in the bottom.
  6. Place the foil-covered silicone molds on top of the trivet (stacking them one on top of the other).
  7. Close and lock the pressure cooker lid, make sure the pressure/steam release switch is set to sealing, and set the cooking time to 40 minutes (for gooey brownies; increase to 45 minutes for firmer brownies) at high/normal pressure. It will take 6 minutes for the pot to reach pressure before the cooking time begins.
  8. Allow the pressure to release from the pot naturally for 10 minutes before releasing the remaining pressure using the manufacturer’s quick release method.
  9. Carefully remove the molds from the pot, remove the foil and paper towels, and cool on a wire rack completely before removing the brownies from the molds. To remove the brownies, push straight upwards from the bottom of each cup.
