OUT-OF-THIS WORLD PLUM BUNDT CAKE

My parents had a plum tree in their yard and would always send me home with bags of delicious sweet and slightly tart plums when I’d visit.

Since you know I love my pressure cooker, I decided to adapt an old plum cake recipe as an Instant Pot Bundt cake, and the results are delicious!

PRESSURE COOKER PLUM BUNDT CAKE

INGREDIENTS

- Plums - All purpose flour  - Baking powder - Baking soda - Salt  - Sugar - Greek yogurt

INSTRUCTION PART 1

In a small bowl, toss the chopped plums with 1 tablespoon of flour until the fruit is evenly coated. Set aside.

INSTRUCTION PART 2

In a large bowl beat together the sugar, yogurt, butter, and egg with a hand mixer until smooth.

INSTRUCTION PART 3

Pour and spread the batter into the prepared Bundt pan (the batter will be very thick). Lay a piece of paper towel over the top of the pan
