SUN-DRIED TOMATO, SPINACH, AND FETA INSTANT POT EGG BITES

Reminiscent of Starbucks’ sous-vide egg bites, these delicious spinach feta bites are made easily in a silicone egg mold.

One of the best things about these sun dried tomato egg bites is that they’re done in only 30 minutes from start to finish, just like all the other easy and delicious recipes in my new cookbook.

SUN-DRIED TOMATO, SPINACH, AND FETA INSTANT POT EGG BITES

INGREDIENTS

- Water - Eggs  - Feta cheese - Cottage cheese - Sun-dried tomatoes

- Chopped spinach  - Black pepper - Garlic powder - Salt

HOW TO MAKE SUN-DRIED TOMATO, SPINACH, AND FETA INSTANT POT EGG BITES

Spray the cups of a silicone egg mold with nonstick cooking spray. In a medium bowl whisk the eggs. Stir in the feta, cottage cheese, sun dried tomatoes, spinach, pepper, garlic powder, and salt.

Divide the mixture evenly between the seven of the egg bite mold cups. Place the egg mold on the trivet, uncovered.

Close the lid and set the cooking time to 11 minutes at high/normal pressure. It will take 6 minutes to reach pressure.
