Summertime, and the livin’s easy… and a lot of my food is getting cooked out on the grill! Something just tastes better about food cooked outside on a grill, am I right? And it doesn’t have to be a process; there are so many ways to cook delicious meals on the grill that are super easy, but outside the box from the usual hot dog or steak. Today I’m sharing a super easy summer grilling recipe: Garlic-Lime Grilled Fish Tacos. They are the perfect combination of light and summery but also full of flavor. This is due to the easiest ever two-ingredient garlic and lime marinade made with Better Than Bouillon Roasted Garlic Base.
If you have never tried Better Than Bouillon, let me tell you why they need to be a staple in your kitchen. They are concentrated base pastes available in several flavors, like Garlic, Chicken, Beef, Vegetable, Fish, and Mushroom. They are incredibly versatile, and can be used in sauces, or for rubs and marinades. They last longer than liquid canned broths after they’ve been opened, and mix and dissolve much more evenly than bouillon cubes or granules. You can substitute them easily into existing recipes using the conversion information on the Better Than Bouillon website.
The marinade I used for today’s grilled fish taco recipe is only two ingredients: Better Than Bouillon Roasted Garlic Base and fresh lime juice. The base is so flavorful that even my seasoning-loving self didn’t need anything additional to create this savory summer marinade.
Better Than Bouillon is so easy to use. You just scoop it out of the jar and add it to your recipe.
For this recipe, I mixed two tablespoons of Better Than Bouillon Roasted Garlic Base with two tablespoons of freshly squeezed lime juice.
Quickest and easiest marinade ever!
After pouring the marinade over the fish (I use cod), I let it sit to absorb some of the flavor for just a quick 15 minutes before putting the fish on the grill. While it’s marinating you can pre-heat your grill or coals, or prep your other taco toppings.
We cooked the fish on a flat grill to prevent any of the fish from falling through the grill rack when it starts to flake.
Once the fish can be easily flaked with a fork, you know it’s done and ready to turn into tacos! Delicious, summery tacos. Tacos so easy and delicious that you’ll want to cook them again the next day and regret not having bought more fish.
I serve the fish on white corn tortillas and top with sour cream, pico de gallo salsa, chopped red onions and cilantro, and thinly sliced red cabbage.
I recommend serving them with some lime wedges on the side, as they are great with a little extra squeeze of lime juice!

- 2 tablespoons Better Than Bouillon Roasted Garlic Base
- 2 tablespoons fresh lime juice
- 16 oz. cod fillets
- 8 6" white corn tortillas
- sour cream
- red onions diced
- pico de gallo salsa
- cilantro chopped
- red cabbage thinly sliced
- lime wedges for garnish

- Scoop two tablespoons Better Than Bouillon Garlic Base into a small bowl, and mix with lime juice until well combined. Pour over fish fillets in a bowl or other shallow container and let marinade for 15 minutes.
- Heat your grill, then place fillets (with marinade) on a flat grill surface (or a sheet of heavy-duty foil over the grill grates) over the heat source. Cook until the fish can be easily flaked with a fork and visibily cooked through.
- Serve the fish on white corn tortillas and top with sour cream, chopped red onions, pico de gallo salsa, cilantro, and sliced red cabbage.
- Garnish with lime wedges.
