One of the things I loved when I was writing Pressure Cooker Cookbook for Beginners was adapting some of my old favorite recipes for the Instant Pot and pressure cooker. Family recipes were revived to be made quickly on weeknights (instead of just for special occasions). I am bringing one of those recipes to you today – an Estofado de Pollo (AKA Pollo Guisado) for the @instantpotofficial! This is a chicken stew adapted from one of my mother’s specialties. Sometimes called Pollo Estofado or Pollo Guisado, there are many different family recipes for chicken stew across Latin American cultures. My mother’s delicious Puerto Rican chicken stew recipe has a wonderful vinegary taste with a light red sauce. It can be made with bone-in, skin-on chicken breasts or thighs (or a combination of both). Whenever my mother or I make this, there is not a morsel of chicken or a drop of sauce left over. I can’t wait for you to try it!

You know my drink of choice is bubbly 🍾 so we just stocked up on some different varieties of @risatawines (delivered to our door by @totalwine 🙌🏼). Even though we’re homebound we still got dressed up last night for date night (#FancyFriday!), popped a bottle of #RisataWines Moscato d’Asti, and enjoyed a nice dinner. There’s something just so celebratory and fun about sparkling wine, that it turns even a night at home into something a little more fun. I recommend giving it a try!

One thing I've learned about myself during #quaran

One thing I've learned about myself during #quarantinelife is how important human connection is to my sanity. I spent a weekend with these two babes (@poshinprogress and @terrimchugh) for @thetravelmom getaway just before all this craziness started, and even though we can't currently be this close (6 feet back, ladies!! 😆), our group texts and weekly FaceTime happy hours have kept me going, reminding me that I’m not alone in the roller coaster of daily emotions we are all feeling. If you haven't had FaceTime/Zoom/Marco Polo dates or happy hours with your friends during quarantine yet, I highly recommend doing one. The face time (no pun intended) does wonders for the soul, and you can do it safely while #socialdistancing. Now I'm going to put on some real clothes and do my hair and makeup for #FancyFriday. Don't forget to tag me in your Fancy Friday posts and Stories and I'll reshare! Maybe I'll wear this cute @express jumpsuit again... not sure yet! I'll post my #StayHome Fancy Friday OOTD on my Stories.
