What you need to make these bacon wrapped steak skewers with a homemade garlic chimichurri recipe

To make these bacon wrapped beef skewers, you’ll need the following:
- Bamboo skewers
- Steak, cubed
- Freshly cracked salt and pepper
- 1 (10-ounce package) Godshall’s Peppered Beef Bacon. Just like traditional pork bacon, Godshall’s beef bacon cooks up crispy, but with less fat, and the naturally wood-smoked Peppered variety adds something special to your recipes. Don’t have beef bacon? You can easily substitute peppered pork bacon in this recipe as well.
- 1 bunch parsley, course stems removed
- 2 cloves garlic
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1/2 tablespoon fresh oregano leaves
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon sea salt
How to make beef bacon wrapped beef skewers and garlic chimichurri

Start by placing the bamboo skewers in a dish of water to soak until ready to use while you’re prepping the skewers. This will add moisture to the wood to keep them from burning while the skewers are on the grill.
Season the beef cubes with salt and pepper. Slice the peppered beef bacon into strips. Remove the skewers from the water and place on paper towels to dry slightly. Wrap a cube of steak with a strip of bacon and slide onto a skewer to secure the bacon around the steak. Add a few more bacon-wrapped steak cubes to the skewer, and repeat until all the cubes are wrapped and skewered.
Heat a grill to medium heat, then add the skewers to the grill in a single layer (optional: grill the bacon wrapped steak skewers over a piece of foil to catch drips). Grill the bacon wrapped beef skewers for 5 minutes, then flip. Cook for 5 more minutes, then check steak and bacon for doneness. Flip and repeat until your desired doneness is reached.
While steak is cooking, make the garlic chimichurri recipe by adding parsley, garlic, olive oil, red wine vinegar, oregano, red pepper flakes, and salt to a food processor. Pulse until the ingredients are pureed.

Serve the bacon wrapped steak bites drizzled with the fresh chimichurri.
