What you need to make this Bacon-Wrapped Spinach-Stuffed Chicken Breast recipe

To make these bacon-wrapped stuffed chicken breasts, here’s what you’ll need:
- Olive oil
- 1 (9-ounce) package fresh spinach
- 2 cloves garlic, minced
- 8 ounces cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 boneless, skinless chicken breasts
- 1 (10-ounce package) Godshall’s Beef Bacon. Don’t have beef bacon? You can easily substitute pork or turkey bacon in the recipe as well.
How to make beef bacon-wrapped stuffed chicken breasts

The first step in making this bacon-wrapped stuffed chicken breast recipe is to preheat the oven to 375 degrees F. Then, to prepare the creamy, cheesy spinach filling, heat olive oil in a skillet over medium heat. Add spinach and garlic and cook, stirring, until the spinach has wilted (3 to 4 minutes). Drain the mixture in a sieve and squeeze out the excess liquid. Transfer to a mixing bowl.

Add the cream cheese, Parmesan, mozzarella, salt, and pepper to the bowl with the spinach and stir until all the ingredients are well combined.

Next, you’ll prepare your chicken breasts for stuffing. Using a sharp knife, cut a slit in the side of each breast to create a pocket, being careful to not cut all the way through.

Fill each pocket with the spinach mixture, then fold the chicken back around the filling.

Wrap each piece of chicken with two pieces of Godshall’s Beef Bacon, with the loose ends of the bacon on the bottom. Place into a baking dish.
Bake the bacon-wrapped stuffed chicken breasts in the preheated oven for 30 minutes or until the bacon is crisp and the chicken reaches an internal temperature of 165 degrees F.

If desired, baste the bacon-wrapped chicken with the pan drippings and place the baking dish under a broiler for some extra crispiness.
