How to make Bacon and Gruyere Egg Bites
If you want to see the steps visually, watch me make this recipe in a video on Instagram here. To make this Beef Bacon and Gruyere Egg Bites recipe, you’ll start by preheating the oven to 325 degrees F and spraying the cups of a 12-cup muffin pan with nonstick cooking spray. Crack the eggs into a large bowl and whisk them. Stir in the cooked, chopped Godshall’s Beef Bacon, cheese, cottage cheese, parsley, salt, pepper, and garlic powder until well mixed. Divide the egg mixture evenly between the cups of the prepared muffin pan.
Place the muffin pan onto a baking sheet. Carefully pour hot water into the baking sheet until it reaches halfway up the sides of the muffin cups. This water bath will create a steamy environment in the oven to yield moist and fluffy egg bites, and also help the edges of the egg bites cook more evenly and gently.
Carefully place the water-filled baking sheet with the muffin pan into the preheated oven. Bake the Bacon and Gruyere Egg Bites recipe for 20-25 minutes, or until the egg bites are just set.

Carefully remove the pans from the oven and allow to cool for 5 minutes. Use a butter knife or small spatula to release the egg bites from the sides of the muffin cups, and scoop out of the cups with a spoon. You can either eat the beef bacon recipe right away, or if you’re storing for meal prep, allow them to cool to room temperature before storing in an air tight container in the fridge.
