No Bake Lemon Icebox Pie Recipe

At the Mom 2.0 Summit a few months ago, my eyes were opened to the versatility of sweetened condensed milk.  I mean, I have used it for very specific reasons over the years.  What I never thought about was how this simple ingredient can add so much to a wide variety of food and beverages.  Eagle Brand was one of the exhibitors at Mom 2.0, and I must admit, I found myself passing by their table during each break.  Each time, they had a different food or beverage to sample that used sweetened condensed milk in different, and often surprising ways.  I plan to experiment with a few of these in my own cooking and entertaining, and will be sure to share them with you here and on social media.

This week, with the sweltering summer heat here in Central Texas, I could not be bothered to bake anything.  Nope, if dessert was to be had, it would have to be cool, creamy, and refreshing.  Since the #FabFam loves citrus (key lime pie, sorbet, a nice glass of homemade lemonade, a fresh margarita…), I decided to make a lemon icebox pie that I saw on the Eagle Brand Recipes site.

Get the Lemon Icebox Pie recipe from Eagle Brand here.  The pie was incredibly easy to make, with quick and minimal prep (always welcome!), and no baking (just a fair amount of time setting in the fridge).  It was citrusy, but not too sour for the little ones (I think the sweetened condensed milk provided the right amount of sweetness).  It was creamy (also thanks to the sweetened condensed milk), cool, and refreshing.  Just the right kind of dessert for a hot summer day.

While the recipe says to chill for three hours, I found that it set more fully overnight, so I’d recommend that if you give this recipe a go.

    I have an old lemon ice box pie that I got from my great aunt. It is eagle condensed milk, 1/2 cup of lemon juice(fresh), graham cracker crust and whip topping. Same good taste.
