I always think of stews when I think of Irish food, and my mind usually floats to the delicious stout that often accompanies one. I am sharing a recipe today that is hearty stew made with stout beer… and it’s vegan: Vegetarian Instant Pot Irish Stout Stew. This meatless Instant Pot vegan stew is a delicious, rich, and hearty choice for St. Patrick’s Day or when the weather is cold. Serve this Instant Pot Irish stew with soda bread. Is the beer vegan-friendly in this vegan Irish stew?
According to Guinness’ FAQs their “new state-of-the-art filtration process has removed the use of isinglass as a means of filtration and therefore made the ingredients in Guinness Draught, Guinness Extra Stout and Guinness Foreign Extra Stout vegan friendly.” Therefore, if you use Guinness for the stout beer in this Instant Pot Irish stew, it will be vegan-friendly.
What you need to make vegetarian Instant Pot stew
I’ve got the full Instant Pot vegan stew recipe at the end of this post, but here are the ingredients you’ll need to make it, along with a few ingredient tips.
- 1 tablespoon vegetable oil
- 1 16-ounce package baby Bella mushrooms, quartered
- 2 cups vegetable broth
- 1 cup Guinness Irish stout beer
- 3 tablespoons tomato paste
- ½ tablespoon apple cider vinegar*
- ½ tablespoon soy sauce*
- 1 teaspoon salt
- 1 teaspoon ground black pepper
- ½ teaspoon brown sugar*
- ½ teaspoon garlic powder
- 1 ½ pounds potatoes, peeled and cut into 1-inch pieces
- 3 medium carrots, peeled and cut into 2-inch pieces
- 1 large onion, chopped
- 1 sprig fresh parsley, chopped
*You can use 1 tablespoon of vegan Worcestershire sauce if you have it, in place of the soy sauce, apple cider vinegar, and brown sugar.

How to make this Instant Pot vegan stew
To make this vegan Irish stew, select the sauté function on your Instant Pot or other multi-function pressure cooker. Heat the oil in the pot, then add the mushrooms and sauté for 3 minutes. Press cancel to end the sauté function.
Add the vegetable broth and Irish stout beer to the pot, scraping the bottom of the pot to loosen any browned bits, then stir in the tomato paste, vinegar, soy sauce, salt, pepper, brown sugar,* and garlic powder until well mixed and no chunks of tomato paste are visible.
Ingredient tip: You can use 1 tablespoon of vegan Worcestershire sauce if you have it, in place of the apple cider vinegar, soy sauce, and brown sugar.
Next, add the potatoes, onion, and carrots to the pot, stirring everything to combine. Close and lock the pressure cooker lid, make sure the pressure/steam-release switch is set to sealing, and set the cooking time to 12 minutes at high/normal pressure. It will take about 17-18 minutes for the pot to come to pressure before the 12 minutes of cooking time begins.
After the pressure cooking time ends, allow the pressure to release from the pot naturally for 10 minutes before releasing the remaining pressure using the manufacturer’s quick-release method. Open the lid and stir the vegetarian Instant Pot stew.
Garnish your Instant Pot Irish stew with fresh parsley.
I recommend serving this vegetarian Instant Pot stew with some bread to sop up all of the delicious broth.

Hi Serina! The cook time should remain the same, however, with more quantity added the pot will take longer to reach pressure than the estimation I have written. Just FYI.
