What you need to make this Funfetti Cookie Cake recipe (confetti cookie cake)
Here are the ingredients and tools you’ll need to gather to make this sugar cookie cake recipe:
- Nonstick spray or your prefer pan greasing ingredient
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tablespoon vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup rainbow sprinkles. Note: Regular rainbow sprinkles work best for this confetti cookie cake recipe, as nonpareils will bleed their colors into the cake and it won’t look as good.
- Optional add-ins: Throw in some white chocolate chips for extra flavor!
- Optional garnish: Frosting, additional sprinkles
- Mixing bowls, mixing spoon, and spatula

- 9-inch cake pan or springform pan (I use a 9-inch springform pan for easy removal of the Funfetti cookie cake from the pan, but you can also use a 9-inch cake pan or pie dish)
How to make cookie cake
If you’ve ever wondered how to make a cookie cake, it’s actually rather quick and easy, as you’ll see. Start by preheating the oven to 350 degrees F, then greasing a 9-inch cake pan.
Place the softened butter, granulated sugar, and brown sugar in a large bowl.
Beat the ingredients together using an electric hand mixer with beaters (or a stand mixer).
Next, add the egg and vanilla extract.
Mix well with the beaters.
Slowly mix in the flour, baking soda, and salt until just combined.
This next step is how this sugar cookie cake becomes a confetti cookie cake! Fold in the rainbow sprinkles (I like to use a spatula for this). This is also the point you’d add the white chocolate chips (if using).
Press the Funfetti Cookie Cake dough evenly into the bottom of the prepared pan.
Bake the Funfetti Cookie Cake for 20-25 minutes, or until the center is set and the edges are golden.
Optional garnish: You can decorate the confetti cookie cake with store-bought or homemade frosting and additional sprinkles for some added presentation. However, there is so much flavor in the cake that frosting is not necessary. This is truly just for the aesthetics.
