How to Make this Easy Chicken Rice Soup with Minute Rice

This quick and easy recipe is perfect as a dinner on busy weeknights, or for a hearty lunch when you’re on the go on weekends.

To make it, start by heating olive oil in a large pot over medium heat. Add the chopped onion, half of the chopped cilantro (saving the other half for later), the lime juice, and the minced garlic. Cook, stirring often, until the onion is soft (this will take about 5 minutes).

Next, add the chicken stock and shredded rotisserie chicken to the pot. Season with freshly cracked salt and pepper to taste. Stir, and cook for 5 more minutes (or until the broth is heated to a low simmer).

While the cilantro chicken soup is coming to a simmer, remove the Minute Cilantro & Lime Jasmine Rice Cups from their packaging and remove the top film. Place both cups in the microwave and heat for 90 seconds. After the 90 seconds is done, stir the heated rice into the cilantro lime soup. Remove the pot from heat.
