Today I’m sharing a tried-and-true, delicious pork fried rice recipe that’s so easy and so foolproof that it’ll be on your regular recipe rotation. What are my secrets to foolproof pork fried rice? What you need to make this quick and easy pork fried rice
Here’s what you need:
- 1 1/2 pounds Smithfield Roasted Garlic & Herb Marinated Fresh Pork Loin Filet
- 3 tablespoons sesame oil (divided)
- 1/2 cup diced onions
- 4 cups cooked white rice
- 1 cup frozen peas and carrots (defrosted)
- 3 eggs, beaten
- 1/4 cup soy sauce (or tamari)
- 3 green onions (chopped)
- Wok or large skillet
This recipe is full of shortcuts that make it faster on both prep and cooking. First, by using Smithfield Marinated Fresh Pork I eliminate the need to season the pork. Second, I use pre-cooked rice which speeds up the cooking process considerably. Finally, I use frozen peas and carrots (defrosted before adding to the dish) to save time on chopping vegetables.
How to make delicious, 20-minute pork fried rice
If you can believe it, this dinner cooks in 20 minutes or less! Using Smithfield Roasted Garlic & Herb Marinated Fresh Pork Loin Filet eliminates the need for me to season the meat, which is a great shortcut. The marinade is delicious exactly as it comes without requiring any additional spices or seasonings. I also chop the pork into small cubes so they saute quickly.
The full recipe is at the end of this post, but here are some step-by-step pictures and cooking tips.
I make this recipe in a wok, but a large skillet will work if you don’t have a wok. First, cubes of the marinated pork are sauteed in sesame oil with diced onion over medium-high heat. Cook, stirring frequently, until the pork is cooked (8 to 10 minutes).
Cooking tip for making pork: chops, loins and roasts are best enjoyed when cooked to 145 degrees with a 3 minute rest.
After the pork is cooked, add cooked white rice and defrosted peas and carrots (from a frozen bag) to the wok with the pork and onions.
Stir everything together so it’s evenly mixed and the rice and veggies are warmed.
At this point, you push the pork and rice mixture to one side of the wok, then pour your beaten eggs into the empty side. Stir the egg until it’s cooked and scrambled (about 2 minutes) while the pork and rice continues to cook on the other side of the pan.
After the eggs are scrambled, mix the pork and rice mixture into the egg. Stir in soy sauce (or tamari, if you prefer), green onions, and the remaining sesame oil.
Stir fry everything together until it’s heated through (about 2 more minutes).
I can’t overstate how important it is to use good quality pork for this fried rice. Smithfield® pork cooks tender and juicy and stays that way, even for leftovers the next day.
