Recipe: Mexican Hash – Developed for Hunt’s and Allrecipes.com

As you may recall, I recently became an Allrecipes.com ambassador (the ambassadors are referred to as Allrecipes Allstars).  One of the great parts of being an Allstar is the opportunity to partner with brands to develop new recipes using their products.  Well folks, my first original recipe developed as an Allrecipes Allstar was “kitchen approved” and published on the Allrecipes.com site!

This was a partnership with Hunt’s to develop a breakfast recipe using canned diced tomatoes.  Since the hubs hates eggs (not allergic, just doesn’t like the flavor or texture), I took this as a challenge to make a hearty, protein-packed eggless breakfast.  The recipe I developed is Mexican Hash, a chorizo, potato, and tomato (of course) breakfast skillet dish.

Get my Mexican Hash recipe from Allrecipes here. This one-skillet meal is a hearty, eggless breakfast with minimal prep. This is a Mexican-inspired variation on the traditional corned beef breakfast hash.
