What you need to make baked brioche French toast

Here are the ingredients and supplies you’ll need to make this recipe for baked French toast with brioche:
- Butter or nonstick cooking spray
- 1 loaf of brioche, cut into cubes (about 10 cups)
- 4 eggs
- 1 cup whole milk
- 3 teaspoons cinnamon, divided
- 1 teaspoon vanilla extract
- Pinch of salt
- 1/4 cup brown sugar
- 1/4 cup flour
- 5 T butter, cold and cut into small pieces
- Optional toppings: Add some walnuts or pecans if you like a little crunch on your Brioche Baked French Toast Casserole. You could also add some raisins or other dried fruits for an additional flavor to your breakfast bake.

Yes! In fact, allowing the dish to sit in the refrigerator makes sure the egg mixture is completely absorbed and it saves time in the morning if you assemble the Brioche Baked French Toast recipe the night before.
How to make this Brioche Baked French Toast recipe

To make this baked French toast with brioche, start by greasing the bottom and sides of a 9″x9″ baking dish with nonstick cooking spray or butter. Place the brioche cubes in the pan and set aside.

In a medium bowl add eggs, milk, 1 teaspoon of the cinnamon, vanilla, and pinch of salt. Whisk together for at least a minute to add air to the mixture (whisking your eggs for 1-2 minutes ensures the mixture is evenly mixed and also adds air to help you achieve a light and airy bake for your Brioche Baked French Toast).

Pour the egg mixture over the brioche cubes and toss until all the cubes are coated with the egg mixture. Making sure all the bread cubes are coated with the egg mixture will ensure an even bake and that there are no dry cubes when serving. Cover the dish with foil and place it in the refrigerator for a few hours or overnight.

When you are ready to bake the Brioche Baked French Toast Casserole, pull the dish out of the refrigerator and let it sit at room temperature for about 30 minutes while doing the next recipe steps.

Preheat the oven to 350° F. In a small bowl add brown sugar, flour, and the remaining 2 teaspoons cinnamon and whisk together with a fork to break up the sugar and evenly distribute the flour and cinnamon.

Add the cold pieces of butter and press it into the mixture to create small pieces of crumble. Tip for a chunkier crumble topping: before adding the crumble to the top of the dish, squeeze it in your hand first so it sticks together, then break it up as you top the dish so you have bigger chunks on top.

Add the crumble evenly over the top of the brioche cubes mixture, then re-cover with foil.
