What you need to make penne al pomodoro
Classic penne pomodoro recipes include only a few ingredients for the sauce: olive oil, garlic, tomato, and basil. Since you needn’t mess with a good thing, I kept this penne al pomodoro recipe to those simple ingredients. The full Instant Pot penne pasta recipe is at the end of the post (feel free to scroll down if you’re ready to cook), but here’s what you need:
- 2 tablespoons olive oil
- 3 cloves garlic, crushed
- 2 ½ cups water
- 1 teaspoon salt
- ½ teaspoon pepper
- 12 ounces penne pasta
It wouldn’t be a pomodoro without tomatoes! The word “pomodoro” literally means a sauce made with tomatoes.
- 1 14-ounce can whole peeled tomatoes, with juices, pureed in a food processor
- 1/3 cup coarsely chopped fresh basil (about 10 large leaves)
- ¼ cup shredded parmesan cheese
How to make penne pomodoro in the Instant Pot
To make this Instant Pot pomodoro, start by selecting the Sauté function on a multi-function electric pressure cooker (such as an Instant Pot). Heat the olive oil in the pot, then add the crushed garlic cloves to the pot and sauté until they are fragrant (between 30 seconds and 1 minute). Push Cancel to end the Sauté function.
Quickly pour the water into the pot and stir with a wooden or plastic spoon, scraping the bottom of the pot to loosen any browned bits, then stir in the salt and pepper. I recommend doing this quickly after the garlic is fragrant so the garlic doesn’t overcook in the hot pot.
Add the penne pasta to the pot, making sure the noodles are evenly submerged in the liquid, but do not stir.
Pour the pureed tomatoes over the top of the pasta, again, not stirring. Not stirring will help keep the pasta noodles from sticking together during pressure cooking.
Sprinkle the chopped basil over the top of the tomatoes.
Close and lock the pressure cooker lid, make sure the pressure/steam release switch is set to sealing, and set the cooking time to 5 minutes at high/normal pressure. It will take about 9 minutes for the pot to reach pressure before the cooking time begins. After the pressure cooking time ends, carefully release the pressure using the manufacturer’s quick release method. Open the lid.
Add the parmesan cheese to the pot, stirring until the cheese has completely blended into the penne pomodoro pasta sauce and any noodles that were stuck together have broken up.
So incredibly simple, yet so delicious! There is never any leftovers in my house when I make penne al pomodoro!
