Is there something that you never make, because it’s the specialty of someone else in your family? Even though I cook a lot, and make most of the meals for my family, there are a few things that belong to my husband because he just does them so well: most things that go on the grill or in the smoker, and guacamole. We love guac, and he’s just got the recipe down so well! Since today is #NationalGuacamoleDay, I convinced the hubs to make it with me over his shoulder, documenting the steps and quantities of ingredients (let’s just say it was not as quick as he was used to with me doing that!). Today I am sharing my husband’s always-amazing, easy guacamole recipe. This quick, delicious appetizer is the best recipe for guacamole that I’ve found, and it is great for a party or a crowd (perfect tailgate party food). It can also be made with or without cilantro (we’ve got a great substitute for those of you who have that “cilantro tastes like soap” thing going on).

Place coarsely chopped avocado and red onion in a large mixing bowl.
Squeeze in the juice of one lime.
Add some coarse salt, freshly cracked black pepper, and garlic powder to the mixing bowl. Smash the avocado with a fork and mix the ingredients together, leaving some chunks of avocado.
Next, mix in some cilantro. If you don’t like the taste of cilantro, you can substitute chopped romaine lettuce in its place, and the guacamole will still come out deliciously. We do this sometimes ourselves just to mix it up.
Stir the cilantro (or romaine lettuce) into the avocado mixture until evenly incorporated.
For presentation, transfer the guacamole from the mixing bowl to a serving bowl. Or if you want, you can eat it directly from the mixing bowl.
Serve the guacamole with tortilla chips or your favorite low-carb vegetables (since this also works as a delicious low carb recipe).
