Today I’m sharing my recipe for Keto Pork and Veggie Cauliflower Fried Rice. You won’t miss takeout at all with this quick keto-friendly version of Chinese-style pork fried rice! It’s great as a low carb main dish or as a keto side dish recipe to go along with other Asian-style recipes. Oh, and I forgot to mention that this keto pork fried rice will be on your table in about 30 minutes! What’s the best low-carb veggie rice for keto fried rice?
Cauliflower is my favorite veggie substitute for rice. It’s low in net carbs, is good for you, and has a relatively plain taste, which makes it very versatile in low carb recipes like keto fried rice. It’s also really easy to prepare.
How to make fresh cauliflower ‘rice’ for keto fried rice
You can buy ready-made cauliflower rice in stores if you want to save time and effort, but honestly, it’s SO easy to make keto-friendly cauliflower rice yourself at home. I recommend giving it a try at least once so that you can see just how quick and easy it is. It not only tastes great when fresh, but it’s also really cost effective to make it yourself. How to make keto pork fried rice at home
I make this recipe in a wok, but a large skillet will work if you don’t have a wok. Savory sesame oil is one of the secrets to this keto pork fried rice’s deliciousness. First, strips of pork are sauteed in sesame oil, then the dish is finished with even more sesame oil towards the end (which you’ll see later). You start by heating 2 tablespoons of sesame oil in a wok or large skillet over medium-high heat and tossing the pork in, making sure the pork is thoroughly coated with the oil.
Add your prepared cauliflower rice, broccoli florets, diced mushrooms, celery, and garlic, and cook, stirring frequently, until the pork is only slightly pink in the center (5 to 7 minutes).
At this point, you push the pork and cauliflower mixture to one side of the wok, then pour beaten eggs into the empty side. Stir the egg until it’s cooked and scrambled (about 2 minutes) while the pork and cauliflower continues to cook on the other side of the pan.
After the eggs are scrambled, you’ll mix the pork and cauliflower mixture into the egg. Stir in tamari (or light soy sauce if you don’t have tamari), green onions, and 1 more tablespoon of sesame oil, then stir fry everything until it’s heated through (about 2 more minutes).
You’ll get 4 servings of this keto pork fried rice if you’re using it as an entree, or 6-8 servings if you’re serving the keto fried rice as a side dish.

You can add more tamari (or light soy sauce) and/or sesame oil to your bowl if you’d like. My hubby is addicted to sesame oil, so no matter how much I add while cooking, he always likes to top his keto fried rice off with a little more. Thank goodness our local Asian market sells sesame oil in bulk!
