Our part of Texas is in the path of totality for the upcoming solar eclipse, which is a once-in-a-lifetime opportunity for Texans in our area! Because of the rarity of this occurrence, naturally, my family had to celebrate! We decided to make a few solar eclipse snack ideas (specifically, a few eclipse themed desserts): Solar Eclipse Cookies and Solar Eclipse Cupcakes. Solar Eclipse Cookies
First, I’m sharing these Solar Eclipse Cookies. These eclipse treats are easy enough that the kids can help make them, and they start with prepared cookie dough as a shortcut (you know how I love my shortcuts!).
Ingredients:
- Sugar cookies (sized from the 24-pack, not the “big cookie” size)
- Fudgy brownie cookies (I used the ones from this 12-pack)
Steps:
- Preheat the oven to 350 degrees F.
- Line a baking sheet with parchment paper.
- Roll individual sugar cookies into a ball, then flatten. Arrange on the parchment-lined baking sheet at least 2 inches apart.
- Roll individual brownie cookies into a ball, working until smooth. Press down to flatten in your hand, smoothing out the edges as needed to maintain a round shape. The brownie cookie will be flattened to the same width as the sugar cookie while raw, as the sugar cookie will spread more while baking. Note: Even though the sugar cookies start out smaller than the brownie cookies, we’re still using a 1:1 cookie ratio, because the sugar cookies spread way more than the brownie cookies while baking.
- Press the brownie cookies on top of the sugar cookies on the baking sheet. Press some of the brownie cookies right in the middle, and press others offset to the left or right to show some as stages of the eclipse.
- Bake in the preheated oven for 10 minutes, or until the edges of the sugar cookie are starting to become golden.
- Cool the eclipse themed desserts on the baking sheet on a wire rack until the eclipse cookies are set.
- While cooling, use a large cup or large round cookie cutter to swirl around the cookies on the baking sheet to make them perfectly round and condense the edges of the sugar cookie inwards closer to the chocolate cookies. See the method on Sally’s Baking Addiction here.
Solar Eclipse Cupcakes
Next are these super easy Solar Eclipse Cupcakes. They are easy enough to decorate that it doesn’t require any special skill to make these solar eclipse themed snacks.
Ingredients:
- Cupcakes
- Yellow frosting
- Gold or yellow sugar sprinkles (I used Wilton’s Gold Sanding Sugar)
- OREO Cookies
Steps:
- Start with your favorite cupcake recipe or store-bought cupcakes and frost with yellow frosting.
- Add gold or yellow sugar sprinkles to a small bowl, and press the tops of the Solar Eclipse Cupcakes into the sprinkles to coat them generously.
- Press an OREO Cookie onto the top center of each cupcake so it looks like the moon is in front of the sun, with the sun’s corona glowing around it.
