This rice taco salad with creamy cilantro dressing is a quick rice recipe thanks to using Minute Rice Cups. - 1 bunch cilantro
- 1/4 cup white wine vinegar
- 1/4 cup water
- 5 cloves garlic
- 1 jalapeno pepper, seeded
- 1/2 teaspoon salt
- 2 cups mayonnaise
- Romaine lettuce
- Black beans
- Shredded Mexican cheese blend
- Sour cream
- Pico de gallo salsa
How to Make this Mexican Salad with Rice and the Best Creamy Cilantro Dressing

First, you’ll make the dressing for this taco salad with rice. The dressing part of the recipe makes a lot more than you’ll need for the salad, so you can save some for future salads or even use as a dip (and trust me, this is the best creamy cilantro dressing, so you’ll be happy you have extra!). In a food processor, add cilantro, white wine vinegar, water, garlic, jalapeno, and salt. Process until the ingredients are well-chopped.

Add mayonnaise and pulse a few times until the ingredients are well mixed. Set the cilantro dressing aside.
Remove one Minute Spanish Rice Cup from its packaging and remove the top film. Place the cup in the microwave and heat for 60 seconds.

To assemble the Spanish rice salad, add romaine lettuce to a large bowl. Drizzle with the cilantro dressing and store the remaining dressing to use later. Top the salad with the heated Spanish Rice Cup, followed by the black beans, shredded cheese, sour cream, and pico de gallo (to taste).
