Like my Vegan Chocolate Zucchini Bread recipe, this dairy free zucchini bread uses a flax egg (a mixture of oat milk and ground flax seeds) in place of the egg. With the use of ground flax in the batter and oat milk in the glaze, the look of the bread and glaze will be more earthy and less bright/white than a traditional lemon zucchini bread, but the flavor is just as delicious!

Vegan lemon poppy seed bread doesn’t rise as much as traditional zucchini bread given the substitution of a flax egg for a dairy egg, but this is common in vegan/egg-free baking. It still comes out moist and delicious!
