To keep these vegan apple muffins dairy-free, we used a combination of flax seed and applesauce as an egg replacement, and coconut oil instead of butter.

These have added health benefits since they’re whole wheat apple muffins. Whole wheat flour is more nutrient dense with higher amounts of fiber and other vitamins and minerals compared with white flour. However, because whole wheat flour doesn’t rise as much as white, all-purpose flour, this recipe calls for extra baking powder to assist with the rise, as well as a baking process that starts with a higher temperature for 5 minutes before the temperature is reduced for the remaining baking time.

To get the great shape, the batter will be very thick. Unlike other muffin recipes where you fill the muffin cups only part way, this apple cinnamon vegan muffins recipe has you filling the cups all the way. I also like to use an ice cream scoop to distribute the batter evenly between the cups and create the mounded shape we love for our muffins.
