How to make oven baked chili cheese dog bites
To make these chili cheese dog cups, start with an 8-pack of hot dogs and an 8-pack of hot dog buns. Cut them each into thirds.
Preheat the oven to 375 degrees F. Place the pieces of hot dog buns, open face up, into the cups of 2 12-cup muffin pans.
Distribute half the cheese evenly into the opening of all of the hot dog buns. The reason I like to put the cheese on the bun first for these mini chili dogs is because the melting cheese adds a protective barrier that will help keep the buns from getting soggy as they bake. If desired, you can even squirt some ketchup over the top of the cheese before taking the next steps for your chili cheese dog bites.
Place a piece of hot dog on top of the cheese in each bun.
Next, spoon chili (without beans) over the top of each hot dog. You can’t make mini chili cheese dogs without some yummy chili!
Bake the chili dog appetizers in the preheated oven for 15 minutes. Remove the pans from the oven and sprinkle the remaining cheese over each dog. Bake for 1 more minute, or until the cheese on the top is melted. Serve the chili cheese dog bites on a serving platter and top with diced red onion.
