I’ve been having a lot of fun experimenting with Instant Pot silicone mold recipes. You can do so much more than egg bites with Instant Pot egg bite molds. I’ve made breakfasts (see my Bacon and Gruyere Instant Pot Egg Bites recipe), desserts (see my Instant Pot Pumpkin Spice Donut Holes and these delicious Instant Pot Mini Cheesecake Bites), and today I’m sharing a dinner entree for Instant Pot Bacon Mini Meatloaves! One of the things I love about egg bite mold recipes is how they make perfect individual portions. Today’s recipe makes 7 or 8 Instant Pot mini meatloaves (depending on the size of your egg bite mold), which easily serves 4 people. Because I love any excuse to eat bacon, my Instant Pot mini meatloaf recipe includes bacon, however if you don’t have any, the recipe works just fine without it. Tools needed to make Instant Pot mini meatloaf

Electric or stovetop pressure cooker. I own the Instant Pot DUO Plus 6-Quart 9-in-1 pot, which works out great for my family of four.
Silicone egg bites mold. The Instant Pot makes amazing breakfasts that are also super convenient for making in advance to save time on busy mornings. Egg bite molds are one of the best accessories for your Instant Pot, and not just for making copycat Starbucks sous-vide egg bites; you can also use them for making muffins and other recipes with individual-size portions (like today’s Instant Pot mini meatloaf recipe).
Optional: Bakeware sling. This is my second favorite Instant Pot accessory, and it gets used almost daily. While your pot likely came with a steamer rack trivet, this sling acts as both a trivet and a convenient way to lower and raise food into and out of the pot.
How to make Instant Pot mini meatloaf
To make this Instant Pot mini meatloaf recipe, start by adding 80% lean ground beef, real bacon bits, breadcrumbs, egg, dried minced onion, salt, pepper, and garlic powder to a medium-sized bowl. Ingredient notes: you can also use diced real onion and make fresh bacon and chop it, but for shortcuts I use dry minced onion and the real bacon bits from a pouch (the fresh, soft kind; not the hard, dehydrated kind in the bottle).
Mix everything until the ingredients are thoroughly mixed together.
Divide the meat mixture evenly into the cups of a silicone egg mold (the mixture may overflow the cups a little; this is OK, just mound the extra meat on the top of each Instant Pot mini meatloaf).
Cover the mold loosely with foil. Pour water into the pressure cooker pot and place a steamer rack trivet in the bottom (if you are using a bakeware sling you won’t need to use the trivet). Place the silicone mold on top of the trivet.
Close and lock the pressure cooker lid, make sure the pressure/steam release switch is set to sealing, and set the cooking time to 35 minutes at high/normal pressure. It will take about 6 minutes for the pot to come to pressure before the cooking time begins. After the pressure cooking time ends release the pressure using the manufacturer’s quick release method.
Open the pressure cooker lid and carefully remove the silicone mold from the pot to allow the Instant Pot mini meatloaf to cool on the counter for a few minutes.
While the Instant Pot mini meatloaves are cooling, preheat your oven’s broiler. In a small bowl, mix an 8-ounce can of tomato sauce together with some oregano and seasoning salt.
Remove the mini meatloaves from the mold and place them standing up in a single layer in a small baking dish.
Spoon some of the tomato sauce on top of each of the mini meatloaves.
Place the baking dish under the preheated broiler and cook until the sauce is set (this will take about 3 minutes).
Serve your Instant Pot mini meatloaf with your favorite comfort food side dishes.
