What you need to make these chocolate peanut butter oat balls

Here are the ingredients and tools you’ll need to make this recipe for no bake chocolate peanut butter protein balls:
- 1 1/4 cups rolled oats. You can increase the protein by just over half a gram per ball if you use protein oats (like Bob’s Red Mill Organic Protein Oats)
- 3/4 cups vanilla-flavored plant-based protein powder (I prefer this plant-based powder from Orgain)
- 1 cup added protein chunky peanut butter (such as SKIPPY® Chunky Peanut Butter Blended with Pea Protein). You can also use regular peanut butter for this recipe, but you will have about 1g less protein per ball.
- 1/4 cup honey
- 2 tablespoons maple syrup
- 6 ounces semi-sweet chocolate chips
- 1/2 tablespoon coconut oil
- Mixing bowls
- Measuring cups and spoons (when recipes use sticky ingredients like peanut butter, honey, and chocolate as this recipe does, I use these Deiss silicone nonstick measuring cups, which are also microwave-safe, so you can melt the ingredients right in them)
- Quarter sheet pan (or similarly-sized platter)
- Parchment paper
- Cookie scoop (I use a 1 tablespoon/4 teaspoon capacity scoop like this one from Wilton)
- Optional: Kitchen scale (I use it to measure the chocolate chips)
How to make chocolate peanut butter protein balls

The first step in making these no bake peanut butter protein balls is to mix the dry ingredients together. In a large bowl, add the oats and protein powder.

Stir well.

Next, you’ll combine the wet ingredients for the peanut butter and oats protein balls. In a medium microwave-safe bowl, add the chunky peanut butter, honey, and maple syrup.

Microwave for 15 seconds, then stir until combined.

Add the wet ingredients to bowl with the oats and protein powder.

Stir until the dry ingredients are well incorporated, with no powdery sections (it will be thick, so keep working it until the dry ingredients are all well moistened and you don’t see any dry left, otherwise it will be difficult to shape the oat and peanut butter protein balls).

Roll the mixture into balls and place on a parchment paper-lined dish or small sheet pan (I use a cookie scoop, leveled-off, not heaping, to make even sized scoops then roll into balls – this method yields 24 balls that also happen to fit nicely on a quarter-size sheet pan in 6×4 rows). Place the pan of no bake peanut butter protein balls in the refrigerator for 30 minutes to an hour.

In a small microwave-safe bowl, place the chocolate chips and coconut oil. Microwave in 20-second intervals, stirring in between, until melted and smooth. With the peanut butter and oatmeal protein balls still on the parchment paper-lined pan, spoon a generous amount of melted chocolate over the top of each ball, allowing to drip down the sides of the balls.

Place the dark chocolate peanut butter protein balls back in the refrigerator until the chocolate sets completely.

Store the chocolate peanut butter oat balls in the refrigerator.
