- 1/2 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup dry red wine
- 3 cups fat-free, less-sodium chicken stock
- 3 cups water
- 1/4 teaspoon dried thyme
- 4 (1/2-inch-thick) slices diagonally cut French bread baguette, lightly toasted
- 4 tablespoons grated Gruyère cheese
- 4 teaspoons grated Parmesan cheese

Here’s how to make this quick easy French onion soup.
First, melt butter in a medium saucepan over medium heat. Add onion, sugar, and pepper to the pan, and cook, stirring occasionally until golden brown (about 15 minutes).
Stir in the wine and cook until the wine is almost completely evaporated (about 2 minutes).
Add chicken stock, water, and thyme and bring to a boil, stirring occasionally. Cook until reduced by half (about 15 minutes).
Preheat the broiler. Divide the healthy onion soup evenly between 4 ovenproof soup bowls, and place the bowls on a baking sheet.
Top each bowl with 1 slice of the toasted baguette. Sprinkle 1 tablespoon Gruyère cheese and 1 teaspoon Parmesan cheese over the top of each bowl.
