Truffle bacon is really easy to make. The longest part of the process is the marinade step, which you’ll want to prep the day or evening before you plan to cook and serve your bacon and truffle. In a large plastic zipper bag or a container with a lid, combine the bacon slices, truffle oil, and truffle zest. Place it in the refrigerator to marinate for 12–24 hours.
When you’re ready to cook your truffle bacon, preheat the oven to 400 degrees F, line a baking sheet with foil, then place a wire rack over the top (such as a wire cooling rack). Remove the truffle bacon from the marinade container and place the bacon pieces on top of the wire rack. Season with freshly cracked pepper.
