It’s almost time for one of my favorite holidays: St. Patrick’s Day! I love the festive green and rainbow motifs and anything shaped like a shamrock (case-in-point, my delicious Mint Swirl Shamrock Brownies). Today I’m sharing a treat that I’ve been making for my kids for several years, but haven’t put the instructions on the blog… until now! They’re festive green St. Patrick’s Day Lucky Charms Treats shaped like shamrocks! These Lucky Charms marshmallow treats are a lucky twist on the traditional Rice Krispies treats. Using Lucky Charms cereal (instead of Rice Krispies), green food coloring, and a shamrock cookie cutter, these Lucky Charms treats are perfect for St. Patrick’s Day. They’re fun to make with the kids at home or to bring for a class party, and also a great addition to a St. Patrick’s Day Snack Board. I developed this recipe as part of the Allrecipes Allstars Tastemakers program. How to make St. Patrick’s Day Lucky Charms Rice Krispie treats
These Lucky Charms marshmallow treats have a very similar method as making Rice Krispies treats, but with a few specific tweaks to make them St. Patrick’s Day Rice Krispie Treats (using Lucky Charms cereal instead of the Rice Krispies). Start by lining a 9×13-inch pan with parchment paper and coat with nonstick cooking spray (this will make it easier to mold and cut with a cookie cutter in the next steps). Melt the butter in a large saucepan over low heat, then add the marshmallows and stir until the marshmallows have completely melted and incorporated into the butter. Remove the marshmallow mixture from the heat and mix in a few drops of green food coloring to get it to your desired color. The color of the marshmallows will be the color of your St. Patrick’s Day Lucky Charms Rice Krispie treats, so you’ll want to get the melted marshmallows to your desired color as it won’t be easy to add more food coloring later.
The next step to making this St. Patrick’s Day Lucky Charms treat recipe is to place the Lucky Charms cereal in a large bowl. Per my note below,* don’t go eating the rest of your cereal from the box just yet – you’ll want to reserve some of the marshmallow shapes from the cereal box for presentation later. Add the marshmallow mixture to the bowl with the cereal and stir until the cereal is well coated, but be sure to fold it together gently, as the marshmallows in the cereal are easily crushed. Then, evenly and gently press the Lucky Charms treats cereal mixture into the prepared pan with a greased spatula. Set the pan of St. Patrick’s Day Lucky Charms Treats aside to cool for a few minutes.
Once the Lucky Charms marshmallow treats have cooled, remove the treats (with the parchment paper) from the pan and place the sheet of treats on top of a large cutting board, parchment paper and all. The parchment paper should not only make it easier to lift the sheet of St. Patrick’s Day Lucky Charms Treats from the pan, it will also help with the next step of cutting and separating the treats. To do this, you will use a shamrock cookie cutter to cut the cereal treats into shamrock shapes.
*Presentation Tip: If you want an extra fun presentation, separate some of the marshmallow shapes from the remaining cereal in your box. Gently press the reserved marshmallows on top of the treats after cutting to add some color and design to the final presentation.
That’s how you make St. Patrick’s Day Lucky Charms Rice Krispie treats! Here’s the detailed St. Patrick’s Day Lucky Charms Treats recipe. Enjoy, and have a happy St. Patrick’s Day!
