What you need to make these mini key lime pies
Here’s what you’ll need to make these key lime bites:
- 12-cup muffin pan with silicone muffin liners in each cup (or use a silicone muffin pan placed on top of a baking sheet)
- 9 full sheet graham crackers, ground into crumbs (I use my 8-cup Hamilton Beach food processor to process them into crumbs)
- 6 tablespoons unsalted butter, melted
- 2 tablespoons brown sugar
- Pinch salt
- 1 (14-ounce) can sweetened condensed milk
- 3 egg yolks
- 1/2 cup key lime juice (you can substitute regular lime juice if you can’t find key limes or ready-made key lime juice)
- 1 teaspoon lime zest
- Whipped cream
- Lime slices, for garnish
How to make this mini key lime pie recipe
To make key lime pie bites, start by heating the oven to 350° F. Place a silicone muffin liner in each cup of a 12-cup muffin pan (or use a silicone muffin pan placed on top of a baking sheet – which is what I do). Spray the inside of the liners or muffin cups with nonstick cooking spray.
In a medium bowl, mix the graham cracker crumbs, butter, brown sugar, and salt together until all the crumbs are moistened. This is your delicious graham cracker crust base for the mini key lime pies!
Divide the graham cracker mixture into the bottom of each of the prepared muffin cups and press to pack down into the bottom of the cups. Bake in the preheated oven for 8 to 10 minutes, or until the crust is firm. Remove from the oven and allow to cool.
Meanwhile, it’s time to make your mini key lime pie filling. In large bowl, beat the condensed milk and egg yolks together with a whisk.
Stir in the lime juice (key lime juice is best, but you can use regular lime juice if you can’t find key limes or key lime juice) and lime zest.
Divide the mixture evenly into the cups on top of the graham cracker crust.
Bake the mini key lime pie bites for 9 to 11 minutes, or until the filling is set. Cool the key lime pie bites in the muffin pan on a wire rack on the counter until completely cooled before covering and transferring to the fridge to cool for at least 2 hours.
When you’re ready to serve your key lime mini desserts, top the mini key lime pies with a dollop of whipped cream and garnish with a slice of lime.
