How to make air fryer pumpkin hand pies
You can make this air fryer mini pumpkin pie recipe in about 30 minutes (give or take depending on the size of your air fryer and how many batches you can fit at one time). Here are step-by-step photos and instructions for making this bite size pumpkin pie recipe.
To make these mini pumpkin hand pies, start by making the pie filling. To do this, add pumpkin puree, sweetened condensed milk, brown sugar, pumpkin pie spice, and vanilla extract to a medium mixing bowl.
Stir the air fryer pumpkin pie filling well until the sugar and spices are evenly blended into the mixture.
Next, you’ll cut the crust for your bite size pumpkin pie bites. Roll out each circle of the prepared pie dough to 1/8-inch thickness with a rolling pin. Cut circles into the dough using a 3 1/2-inch round cookie cutter to make 24 circles (12 from each dough round), gathering and re-rolling the dough as needed to get the 24 circles.
Moisten the edge of a circle with water, then add just under a tablespoon of pumpkin mixture in the center of the mini pumpkin hand pies. Fold the circle in half and pinch the edges of the dough together to seal. Use a fork to crimp the edges to secure the air fryer pumpkin hand pies further. Add a slit in the top of the crust with a sharp knife. Repeat with the remaining dough circles for the pumpkin hand pies.
Mix turbinado sugar and cinnamon together in a small bowl and set aside. This will be a delicious fall-seasoned topping for your mini pumpkin pie bites.
Preheat an air fryer to 350 degrees F (175 degrees C) and spray the air fryer basket with butter-flavored cooking spray. Place the pumpkin pie hand pies in the basket in a single layer (you may need to work in batches). Spray the tops of each bite size pumpkin pie with more cooking spray, then sprinkle the tops generously with the sugar-cinnamon mixture.
Cook the mini pumpkin hand pies in the air fryer for 9 minutes, or until golden brown.
