- Small pot
- Zester or microplane grater
- 4 shallow (6-ounce) custard dishes (this is a great versatile set, but I also love this pretty set)
- 13×9-inch baking pan
- Wire cooling rack
- Plastic wrap
- Sifter
- Crème Brûlée Torch
Ingredients:
- 2 cups 2% milk
- 3/4 cup nonfat dry milk (this comes in powder form and can be found in the baking aisle of your grocery store)
- 5 tablespoons sugar, divided
- 2 tablespoons honey
- Zest of 1 orange, reserving a few pinches for garnish
- 5 large egg yolks (save the whites for breakfast the next day)
- Pinch salt
- Fresh raspberries, for serving
How to make this orange and honey creme brulee recipe
To make this orange and honey creme brulee recipe, start by preheating the oven to 300° F.
Add the 2% milk, nonfat dry milk, 2 tablespoons of the sugar, honey, and most of the orange zest (reserving a few pinches for garnishing later) to a large saucepan over medium heat. Heat, stirring occasionally, until tiny bubbles form around the edge (being careful not to boil), then remove from heat. Meanwhile, bring a small pot of water to a boil to use for a water bath for baking.
In a medium bowl, whisk together the egg yolks and salt until well mixed.
Next, gradually add the hot milk mixture to the egg yolk mixture, whisking constantly.
Divide the mixture evenly between 4 shallow (6-ounce) custard dishes. Place the dishes in a 13×9-inch baking pan, and add one inch of hot water to the pan around the custard dishes.
Bake the orange creme brulee for 1 hour or until the centers of each custard are set. Remove the dishes from the water bath and place them on a wire rack on the counter to cool completely. After cooling, cover the dishes with plastic wrap and place in the refrigerator to chill for at least 4 hours (or overnight).
When you’re ready to serve your Honey-Orange Crème Brûlée, sift the remaining 3 tablespoons of sugar evenly over the custards.
Holding a brûlée torch about 2 inches from top of each custard, heat the sugar, moving the torch back and forth, until the sugar is completely melted and caramelized.
Top each low calorie creme brulee with a sprinkle of the reserved orange zest and a few raspberries and serve immediately.
