It’s the most wonderful time of the year… baseball season! In case you didn’t know, my family is a baseball family. I’m a lifelong fan of the game, my husband is a coach, my youngest plays competitive travel ball, and we’re ballpark chasers on top if it all (see our baseball road trips). In less than two weeks I get to be frustrated by my team nightly for 162+ games, and on any given weekend for the next few months, I may find myself setting an alarm for 4:00 am (literally tomorrow) for an 8:00 am tournament game over an hour away to play a team based 15 minutes from me. What you need to make this baseball brownie bites recipe

Here is what you need to make these baseball brownies, along with some of my ingredient tips and product recommendations:
- Mini muffin pan (I love this 24-cup silicone mini muffin pan)
- Mixing bowls and spoons
- Wire cooling rack
- Nonstick cooking spray
- 1 1/2 cups white sugar
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 3/4 cup real, unsalted butter, melted (note: you should use real butter for this brownie bites recipe, as the results are not the same with margarine)
- 3 eggs
- 1 teaspoon vanilla extract
- 1 16-ounce container of cream cheese, buttercream, or vanilla cake frosting (basically any white frosting)
- Red cake decorating icing
- Icing bag (reusable or disposable)
- Star icing tip (I used the screw-on plastic one from this icing tip set, which works with a plastic coupler for the icing bag, and just screws directly onto the tube of cake decorating icing)
- Round serving platter or cake stand for displaying the baseball brownie bites
How to make these baseball themed desserts

To make these baseball themed desserts, start by preheating the oven to 325 degrees F and spraying mini muffin cups with nonstick cooking spray. Mix sugar, flour, cocoa powder, and salt together in a mixing bowl. Mix melted butter, eggs, and vanilla extract together in a separate bowl, then add the wet ingredients to the bowl with the dry ingredients and stir the batter until well mixed. After mixing the batter, spoon it into mini muffin cups, filling them 3/4 of the way full and shaking the pans a little to let the batter sink down. You need to then let the batter sit in the cups for 10 minutes before baking. Why this step? Since mini brownie bites cook much faster than regular brownies, you’ll need to let it sit for a bit before baking so the flour can fully absorb into the batter and leave you with a cocoa-y (vs. flour-y) taste.
Bake the baseball party treats in the preheated oven for 12-13 minutes, or until the edges are brown and the centers are set. Since it’s such an art to get brownies just right (gooey on the inside and firm on the outside), I recommend baking them in the center of the oven. So, if you’re using multiple pans, keep them all on the same rack, or bake them in batches (as opposed to putting a pan on the top rack). After baking, cool the brownie bites in the pan on a wire rack for 3 minutes, then remove the brownie bites from the pan to cool on the rack completely before frosting.


Now it’s time to make them into baseball brownies! Arrange the brownie bites into a circle on a serving tray or board. Pipe a star of white frosting onto the majority of the brownie bites, leaving two semi-circle stripes of brownies unfrosted on the sides (about 6 brownies for each semi circle) like the pattern for a baseball. Frost those remaining brownie bites with a star of red cake decorating icing.
