What you need for this two bite brownies recipe
If you’re looking for mini brownie bites recipes, trust me when I say this is the best brownie bite recipe! They are soft on the inside and perfect every time. Here’s what you’ll need to make them:
- Mini muffin pan (I love this 24-cup silicone mini muffin pan)
- 1 1/2 cups white sugar
- 3/4 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon salt
- 3/4 cup real, unsalted butter, melted (Important Tip: In order to make these brownie bites foolproof, it’s important to use real butter, not margarine, for this recipe. I’ve tried it with margarine and it never turns out the right consistency.)
- 3 eggs
- 1 teaspoon vanilla extract
- 1 (16-ounce) container of chocolate cake frosting
- 1/2 of a (16-ounce) container of cream cheese, buttercream, or vanilla cake frosting (basically, your favorite prepared white frosting)
- Icing bags (reusable or disposable)
- Star icing tip (I used the screw-on plastic one from this icing tip set with a plastic coupler in the bag)
How to make football brownie bites (the best brownie bites recipe!)
Making brownie bites from scratch is a lot easier than you might think. The first step for how to make brownie bites is to preheat the oven to 325 degrees F and prepare your mini muffin pan by spraying the cups with nonstick cooking spray. Mix sugar, flour, cocoa powder, and salt together in one mixing bowl. Mix butter, eggs, and vanilla extract together in a separate bowl, then add the butter mixture to the bowl with the flour mixture and stir the batter until well mixed.
The next step in this fudgy brownie bites recipe is to spoon the batter into the prepared mini muffin cups, filling them 3/4 of the way full (you should have enough batter for 36 brownie bites – you might need to work in batches depending on the size of your mini muffin pan). Let the batter sit in the cups for 10 minutes before baking. Why do you need to let it sit, you might be wondering? Since mini brownie bite recipes cook much faster than regular brownies, you’ll need to let them sit for a bit before baking so that the flour can fully absorb into the batter and leave you with a more cocoa-y (vs. a more flour-y) taste.

Center a row of 5 on the top and another row of 5 on the bottom. Finally, center 2 brownie bites in a column on each side. For this pattern, you’ll need a total of 35 brownie bites, and since the recipe will make about 36, the last one is a lagniappe! Enjoy that one as a little treat for yourself! Pipe the tops of the 5 brownie bites in the very center with a star of white frosting on each (for the laces), then frost the remaining brownie bites with stars using the chocolate frosting.
High school or college football variation: The design I’ve shared in these photos is for an NFL game watch party or a Big Game party. If you’d like to make this brownie bite platter to celebrate a high school or college game, you can add more white stars to make stripes on the sides of the ball. I recommend frosting the second and second to last columns (of 3 brownie bites) with white stars, then only doing 3 in the center row white for the laces.
