What you need to make this Halloween mini pie recipe
This no-bake pie is easy to make! Here is what you’ll need to make mini eyeball pies:
- 8 mini graham cracker pie crusts
- 1 (8-ounce) package cream cheese, softened
- 1 (14-ounce) can sweetened condensed milk
- ½ cup lemon juice
- 1 teaspoon vanilla extract
- 1 (21-ounce) can cherry pie filling
- Eyeball icing decorations (or candy eyeballs) – affiliate link
How to make this no-bake eyeball pie

To make these Halloween mini pies, start by beating softened cream cheese in mixing bowl with an electric mixer until smooth. Gradually add a can of sweetened condensed milk and beat in until well blended. Then, beat in lemon juice and vanilla extract.
Spoon some of the cream cheese mixture into each mini graham cracker crust, filling about halfway. Top each with a scoop of cherry pie filling, followed by another smaller spoonful of the cream cheese mixture.

Spread the cream cheese mixture over the cherry mixture lightly so that some of the red cherry pie filling shows around the edges of the Halloween mini pie. Add an eyeball to the top center of each Halloween pie. Using a spoon, drizzle some of the remaining glaze from the can of cherry pie filling to look like red streaks around the eyeballs.

Chill the Halloween pies in the refrigerator until firm (they will still be a little soft; it’s not the dense consistency of a cheesecake, but rather a soft cream cheese pie).
