All year I’ve had an idea to create a strawberry shortcake bites recipe, and now that we’re in peak strawberry season, I’m excited to finally share it with you! Just in time for your 4th of July celebrations, too. This easy Mini Strawberry Shortcake Bites recipe makes the perfect individual dessert bites for a party! What you need to make this Strawberry Shortcake Bites recipe

Here are the ingredients and tools you’ll need to make strawberry shortcake on a stick. It’s really a very simple recipe:
- Angel food cake (either homemade, pre-made, and in either Bundt or loaf form – though I find that the loaf form is easiest to cut into even pieces)
- Optional: You can make these Strawberry Shortcake Bites with cubed angel food cake for ease, but for nicer presentation, you can cut the cake into circles using a 1.25”-1.5” round cutter depending on the size of the strawberries. You can find these sizes in a set like this one from Amazon – affiliate link.
- Strawberries, green leafy tops sliced off
- Mixing bowl
- Strawberry glaze (you can usually find this in the produce section near the strawberries and other components for making strawberry shortcake)
- Cool Whip
- Food picks (I used these ones from Amazon – affiliate link)
How to make Mini Strawberry Shortcake Bites

This Strawberry Shortcake Bites recipe starts with preparing the angel food cake. You can cut the cake into squares approximately 1/2″ tall and 1.25”-1.5” wide (depending on the size of the strawberries). Or for nicer presentation, cut the cake into 1/2″ tall circles using a 1.25”-1.5” round cutter (depending on the size of the strawberries).
In a bowl, toss the strawberries in strawberry glaze until evenly coated. Slice the strawberries in half (so that you have one half that was the leaf side, and another half that’s the pointy tip).

Place a piece of angel food cake on a serving platter. Top with a dollop of Cool Whip, followed by the flat half of the glaze-covered strawberry. Layer one more piece of cake on top, followed by another dollop of Cool Whip, and the pointed half of the glaze-covered strawberry. Secure with a food pick. Be careful not to squish everything down too much when adding the pick to your Mini Strawberry Shortcake Bites, or the whipped cream will squeeze out.
