To make this one pan pesto chicken with veggies, start by preheating the oven to 400 degrees F (or 200 degrees C). Spray a large sheet pan or jelly roll pan with nonstick cooking spray.
Cooking tip: To make cleanup easier, or if you have dark coated sheet pans, line the pan with aluminum foil first, then spray with nonstick spray.
Toss chicken breasts, red potatoes (halved or quartered if large), green beans, and cherry tomatoes in a large bowl with some olive oil and basil pesto.
The pesto is practically all the seasoning you need for the chicken and vegetables!
Spread the chicken and vegetables out onto the prepared sheet pan in an even layer. Season the top of everything with salt and pepper. I like using freshly cracked sea salt and black pepper, but really, just season the sheet pan pesto chicken and veggies to your family’s taste preferences.
Bake the one pan pesto chicken with veggies in the preheated oven for 20-25 minutes, or until the potatoes are fork-tender and the chicken breasts are no longer pink in the center and the juices run clear when cut.
This meal is so simple that it’s almost shocking how delicious and flavorful the one pan pesto chicken with veggies turns out!
