To make this one pan pesto chicken with veggies, start by preheating the oven to 400 degrees F (or 200 degrees C). Spray a large sheet pan or jelly roll pan with nonstick cooking spray.
Cooking tip: To make cleanup easier, or if you have dark coated sheet pans, line the pan with aluminum foil first, then spray with nonstick spray.
Toss chicken breasts, red potatoes (halved or quartered if large), green beans, and cherry tomatoes in a large bowl with some olive oil and basil pesto.

- 4 boneless, skinless chicken breasts
- 1 1/2 pounds red potatoes, halved or quartered if large
- 1 pound green beans
- 1 cup cherry tomatoes
- 1 tablespoon olive oil
- ½ cup basil pesto
- freshly cracked salt and pepper, to taste
