This meal is not only incredibly quick to make (it’s done in under 30 minutes, including prep time), it is also low in calories and loaded with nutrients like protein, vitamin D, and omega-3 fatty acids. What you need to make this Mediterranean halibut recipe
I’ve got the ingredients for the sheet pan halibut listed in the recipe card at this end of this post, but here is the ingredient list with some additional tips for making Mediterranean halibut:
- 4 halibut filets. If you can’t buy them already fileted, get about a pound of fish then cut it into 4 even pieces.
- Substitution tip: If you don’t love the flavor of halibut you can easily substitute cod, haddock, or flounder in this recipe.
- 1 pint of cherry or grape tomatoes. If they are really large you can halve them lengthwise, but keeping them whole is fine.
- 2 medium zucchinis, halved lengthwise then sliced into ½” crescents
- 1/2 cup of pitted Kalamata olives. If you love olives, feel free to throw in more than half a cup.
- 1 lemon (for juicing), plus more lemon for garnishing (cut into wedges)
- ½ tablespoon of capers (you can also increase this amount to taste)
- 2 cloves of garlic, minced
- 1 teaspoon of oregano (I used dried, but fresh works as well)
- Salt and pepper, to taste
How to make this Mediterranean-style one pan halibut dinner
To make this Mediterranean halibut recipe, start by preheating your oven to 425 degrees F. Line a large sheet pan or jelly roll pan with aluminum foil and coat with nonstick cooking spray. Place the halibut filets, tomatoes, zucchini, and olives on the prepared baking sheet in an even layer.
Squeeze one of the lemons over the top of everything, using all the juice until the lemon is spent.
Next, sprinkle capers and minced garlic evenly over the sheet pan halibut and vegetables. Season everything with oregano, salt, and pepper.
Bake the one pan halibut in the preheated oven for 15 minutes, or until the halibut flakes easily. Keep an eye on it towards the end, as there’s a fine line between flaky moist halibut and dry halibut.
Finally, pre-heat the broiler. Place the sheet pan halibut underneath the broiler for 1 minute to add some char and crispness to the veggies.
Serve your Mediterranean halibut with additional lemon wedges. I also threw some fresh oregano sprigs around it for garnish and presentation, but that’s purely for show.
This one pan halibut dinner is so full of flavor, but super light and low on the guilt.
