How to make the honey Dijon sauce for chicken
I’ve got the full chicken and potatoes one pan recipe at the end of this post, but here’s how to make the simple Dijon sauce for chicken. In a small bowl, whisk 1/3 cup honey and 2 tablespoons Dijon mustard until smooth. That’s it! You’ll use this to baste on the chicken while it bakes.
Tips for making One Pan Honey Mustard Chicken and Potatoes
To make this sheet pan Dijon chicken recipe, first you’ll preheat the oven to 400 degrees F (200 degrees C). Line a large sheet pan or jelly roll pan with aluminum foil, then coat it with nonstick cooking spray. Place chicken breasts onto the sheet pan. Depending on the size of your chicken breasts, use 3-4 (enough to serve 4 people). Brush about a third of the honey Dijon sauce onto the chicken.
Toss cubed potatoes and green beans in a large bowl with some olive oil, oregano, rosemary, and garlic powder.
Spread the potatoes and green beans onto the prepared sheet pan around the chicken in an even layer, then season everything with salt and pepper.
Bake the sheet pan Dijon chicken in the preheated oven for 10 minutes, then brush half the remaining honey mustard mixture onto the chicken. Return to the oven to bake for 10 more minutes, then remove and baste the chicken with all the remaining honey Dijon sauce.
Continue baking until the potatoes are fork-tender and the chicken breasts are no longer pink in the center and juices run clear when cut (about 5-10 more minutes).
