- 1 14-ounce package precooked smoked sausage or kielbasa, sliced into ½-inch thick rounds
- 1 head broccoli, cut into florets
- 2 medium potatoes, peeled and cut into 1-inch cubes
- 2 orange or yellow bell peppers, chopped
- ½ large onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon dried parsley
- 1 teaspoon freshly cracked salt, or to taste
- ½ teaspoon freshly cracked black pepper
- ½ teaspoon garlic powder
How to make a one pan sausage and veggies dinner
To make this sausage and veggie sheet pan dinner, start by preheating the oven to 400 degrees F. I like to line my sheet pan with parchment paper since I use a dark coated pan, but foil works as well.
Place sausage pieces, broccoli florets, cubed potatoes, chopped bell pepper and onion together in a large bowl and toss with olive oil. This sausage and vegetable bake is super simple! You can also customize with different veggies (different colors of bell pepper, adding cauliflower, etc.).
Next, spread the sausage and vegetables onto the prepared sheet pan in an even layer and season with dried parsley, salt, pepper, and garlic powder.
Bake the sheet pan veggies and sausage in the preheated oven for 30-35 minutes, or until the vegetables are soft.
