How to make this recipe for freezer breakfast burritos

You can watch a video of how I make these here, but the recipe for Ranch Chipotle Make Ahead Breakfast Burritos starts with cooking bacon in a frying pan, then draining on paper towels. When cooled, crumble the bacon and set aside. Keep the skillet warm, because we’re gonna use the same skillet for the next few parts of this recipe (yay for less dishes to wash!).

Now, for the eggs. Whisk together eggs, milk, and ranch seasoning mix in a bowl until combined.

Pour into the hot skillet and cook and stir over medium-high heat until the eggs are scrambled and set (about 5 minutes), then transfer the cooked eggs to a bowl. If you want to make a more traditional scrambled eggs recipe for these (as opposed to the zesty ranch eggs), check out my article on How to Make the Best Scrambled Eggs!

Next, we’ll prepare the potatoes in the same skillet. Heat oil the same skillet over medium-high heat, then add frozen potatoes, chipotle powder, garlic salt, pepper, and cumin. Fry until the potatoes are browned on the bottom (4-5 minutes), then flip and cook until the other side is browned (about 4-5 more minutes), then let cool.

To prepare the freezer breakfast burritos assembly station while the ingredients are cooling, lay 10 sheets of aluminum foil, slightly larger than the size of your tortillas, on a flat work surface, and lay one tortilla on each sheet of foil.

Evenly distribute the Cheddar cheese on top of each tortilla first. Then, in this order, add scrambled eggs, chicken bacon, salsa, green onions, and potatoes to each tortilla, in that order (the order is important, as the cheese layer going down first creates a barrier for the tortilla to protect it from the wet ingredients, and the potatoes do the same on top of the salsa. This keeps the burrito from getting soggy when freezing and reheating).

Tightly roll the burritos, tucking the tops and bottoms in first.

Wrap aluminum foil tightly around each burrito, covering it completely. Place the freezer meal prep breakfast burritos in resealable plastic bags. Remove as much air as possible from the bags before sealing. Store the make ahead frozen breakfast burritos in the freezer until you’re ready to reheat and eat.

To reheat one of the make ahead breakfast burritos, remove the aluminum foil and place the burrito on a microwave-safe plate, covering it with a paper towel. Heat in the microwave until evenly warmed through, which should take 1-2 minutes (I personally default to 1 minute 30 seconds then check, but this may vary based on your microwave or the thickness of your burrito).

These freezer breakfast burritos are so delicious, and so nice to have ready to reheat on busy mornings!
