How to make these spinach tartlets (feta cheese puff pastry bites)
To make this mini spinach feta puff pastry tart recipe, start by preheating the oven to 375 degrees F (180 degrees C). Spray the cups of a 24-cup mini muffin pan (or 2 12-cup mini muffin pans) with nonstick cooking spray. Roll out the thawed puff pastry sheet onto a lightly floured surface into a rectangle using a rolling pin. Cut the puff pastry into 24 (approximately 2 1/2-inch) squares using a pizza cutter. Lightly press the puff pastry squares into each cup of the prepared mini muffin pan(s) and prick with the tines of a fork.
To make the spinach and feta tartlets filling, mix the mayonnaise, feta cheese, Parmesan cheese, spinach, garlic, and pepper together in a bowl. Spoon the feta-spinach mixture evenly into the cups, being careful not to overflow the cups. If you end up with a little extra filling, it’s great with chips or a piece of toasted French bread!
Bake the spinach and feta mini tarts in the preheated oven until the pastry is puffed and the corners are golden brown (15 to 16 minutes). Cool the spinach tartlets in the pan on a wire rack for 5 minutes before transferring the spinach and feta puff pastry bites to a serving dish.
